The part you actually miss
Start with the part worth keeping. The wind-down is a real biological event, not a bad habit. By evening your body runs low on GABA, your nervous system's own calm brake, so when the day floods you with stress hormone there is little of your own calm left. The first sips of wine reached that brake fast, which is why it felt like the day finally exhaling.
That is the feeling you actually miss. The shoulders dropping, the breath coming back, the moment the tension finally lets go. It was never weakness and never really about the wine. It was a tired nervous system getting the one signal it had run out of.
Keep that part in mind, because it is the part you get to keep.
